Healthy Habit of the Day...
VITAMIN C helps us fight colds and other illnesses. Vitamin C is abundant in foods such as oranges, grapefruit, broccoli and tomatoes.
Recipe of the week...
VEGGIE VEHICLES
Prep Time: 15 minutes
Makes: 2 servings
Ingredients:
- 1 hoagie bun
- 1 cucumber
- 1 carrot
- 2 pitted, stuffed olives
- 1 cup of your favorite veggie dip
- 2 cups of various other vegetables cut into small pieces for dipping, like broccoli, colored peppers and cherry tomatoes
- 1 small pretzel
Utensils:
- A few toothpicks
- A drinking straw
- A cutting board
- A sharp knife
Steps:
- The first thing you want to do is check with a grown-up before you start this.
- Once you get their okay, scoop-out the inside of the hoagie bun, leaving about 1/2 inch on the sides and 1 inch on the ends.
- On the cutting board use the sharp knife to cut 4 cucumber slices (for wheels), 2 thin carrot sticks (for axles), and various other vegetables cut into dip-able pieces.
- About 1 1/2 inches from each end of the bun, push the drinking straw through the bun where the 2 wheels will go, making holes for the axles.
- Poke the straw through the center of the cucumber slices.
- Slide one carrot slice through each hole in the bun, making the axles.
- Attach the cucumber slices to end of the carrot slices to make the wheels.
- Use some toothpicks to attach 2 olives to the front of your vehicle (making headlights).
- Fill the bun with the veggie dip and vegetables
- Enjoy!
