Healthy Habits - Vitamin C & Veggie Vehicles

Healthy Habit of the Day...
VITAMIN C helps us fight colds and other illnesses. Vitamin C is abundant in foods such as oranges, grapefruit, broccoli and tomatoes.
Recipe of the week...
VEGGIE VEHICLES
Prep Time: 15 minutes
Makes: 2 servings
Ingredients:
  • 1 hoagie bun
  • 1 cucumber
  • 1 carrot
  • 2 pitted, stuffed olives
  • 1 cup of your favorite veggie dip
  • 2 cups of various other vegetables cut into small pieces for dipping, like broccoli, colored peppers and cherry tomatoes
  • 1 small pretzel
Utensils:
  • A few toothpicks
  • A drinking straw
  • A cutting board
  • A sharp knife
Steps:
  1. The first thing you want to do is check with a grown-up before you start this.
  2. Once you get their okay, scoop-out the inside of the hoagie bun, leaving about 1/2 inch on the sides and 1 inch on the ends.
  3. On the cutting board use the sharp knife to cut 4 cucumber slices (for wheels), 2 thin carrot sticks (for axles), and various other vegetables cut into dip-able pieces.
  4. About 1 1/2 inches from each end of the bun, push the drinking straw through the bun where the 2 wheels will go, making holes for the axles.
  5. Poke the straw through the center of the cucumber slices.
  6. Slide one carrot slice through each hole in the bun, making the axles.
  7. Attach the cucumber slices to end of the carrot slices to make the wheels.
  8. Use some toothpicks to attach 2 olives to the front of your vehicle (making headlights).
  9. Fill the bun with the veggie dip and vegetables
  10. Enjoy!
